Parmesan crumbed Oysters
This is our favourite cooked oyster dish
Degree of difficulty – easy
Preparation time – 15 mins
You will need
Plain flour ½ cup
Egg wash ; 2 eggs mixed with 2 tbs milk
Freshly grated paramesan cheese 1/2 cup
1/2 cup fresh breadcrumbs
1 doz oysters shucked
1 litre canola oil
Method
Assemble flour eggwash and parmesan combined with breadcrumbs in 3 bowls. Remove oysters from shell, dust in the flour , dip well in the eggwash and finally coat well with crumb mix. Oysters can be prepared to this stage and chilled for later use or cooked immediately.Heat oil in deep fryer wok or deep frypan. If oysters are to be returned to shell for serving, wash and dry them well. Deep fry oysters until golden. We serve them with cranberry and egg mayonaise.
