Mushroom & Oyster Bites

Degree of difficulty – easy
Preparation time – 20 mins

You will need

1 medium onion
12 medium swiss or small field mushrooms
1 egg
2 tbspn parsley
36 oysters
½ cup fresh breadcrumbs


Combine onion, eggs, parsley and breadcrumbs. Chop oysters into 3 or 4 pieces, combine with the breadcrumb mixture. Remove mushroom stems, make sure caps are clean by wiping with a damp cloth. Fill caps with the mixture and place onto a grill tray, top with a small piece of butter and sprinkle with ground pepper or paprika. Grill until golden.
