Degree of difficulty – moderately easy
Preparation time – 20 mins

You will need

100 g (unsalted ) butter
½ cup chopped mixed fresh herbs (eg parsley, chervil, dill and thyme)
2 tspn lemon zest
2 sheets Puff pastry
2 dz shucked oysters
1 egg combined with 2 tspn milk

Method

Mix butter, herbs and lemon zest well to make herbed butter. Cut puff pastry into oval shapes to fit oyster shells. Place a teaspoon of butter onto each oyster. Brush edges of pastry with the egg wash to help glue them to the shells, press on firmly. Brush over top of pastry with remaining egg wash and prick the surface with a fork. Bake in a hot oven 220 degrees for 10 mins until golden .
